A garlic focused salami containing just Poaka's best free range heritage breed pork, organic garlic, pepper and new Zealand organic Red Wine. Very simple but a true classic, bursting with complex flavours.  Traditionally fermented and air dried at low temperature for up to 3 months to deliver the most amazing texture and salami flavour. Sliced thinly for beautiful mouth feel
